Ramadan Recipes: Butter Chicken

Butter chicken or murgh makhani is a chicken curry made with marinated chicken, heavy cream, and tomato puree. The curry originated in Northern India and it is a very popular dish in the Indian subcontinent. It is a perfect combination of creamy and tangy, which makes it a delicious curry to have for iftar or suhoor.

Chicken Marinade Ingredients

800 g skinless and boneless chicken thighs or breasts cut into small pieces
1 1/2 tbsp crushed garlic
1/2 cup plain yoghurt
1tbsp crushed ginger
1 tsp turmeric powder
2 tsp garam masala
1 tsp ground cumin
1 tsp red chilli powder
1 tsp salt

Gravy Ingredients

2 tbsp ghee or clarified butter
2 tbsp olive oil
1 large onion chopped
1 1/2 tbsp crushed garlic
1tbsp crushed ginger
1 1/2 tsp cumin powder
1 1/2 tsp garam masala
1 tsp coriander powder
400 grams crushed tomatoes
1 tsp red chilli powder
1 1/4 tsp salt
1 cup of heavy or thickened cream
1 tbsp sugar
1/2 tsp kasoori methi
  • Method & Directions

  1. Make Chicken Marinade

    Mix chicken with all the ingredients for the marinade in a bowl and let it marinate for 30 minutes or up to an hour.
  2. Fry Chicken

    Heat oil in a pot or a pan over medium-high heat. When the oil sizzles, put chicken pieces in the pan and do not crowd the pan. Fry chicken in two or three batches. Fry chicken pieces until brown on each side. After the chicken pieces are fried, set them aside.
  3. Saute Onions

    Heat ghee in a pan. Fry onions until they start to sweat. Add garlic and ginger to the pan for 1 minute until fragrant. Add ground coriander powder, cumin powder, and garam masala. Cook for 20 seconds or until fragrant.
  4. Make Purree

    Add crushed tomatoes, chilli powder, and salt. Let simmer for 10 to 15 mins, then stir occasionally until the sauce thickens.
  5. Blend Puree in Blender

    Pour puree into a blender and blend it until smooth.
  6. Cook Puree and Chicken

    Pour the puree back into the pan. Stir in sugar, cream, and kasoori methi. Add marinated chicken to the curry and cook for 8 to 10 minutes until the chicken is thoroughly cooked and the sauce has thickened.
  7. Garnish and Serve

    Garnish butter chicken with cilantro and serve with rice or naan bread.
