Ramadan Recipes: Malai Kofta

Malai Kofta is a flavoursome recipe that includes fried potato and paneer balls dipped in a creamy and tangy curry. Malai refers to the cream used in the recipe and kofta refers to the dumplings or balls that are the highlight of the curry. Koftas are popular in various regions besides the Indian subcontinent, including the Middle East, the Balkans, and North Africa. In these regions, koftas are usually made of minced meat, however, the Indian variation opts for a vegetarian option. Furthermore, this variation is made with curry, which adds a delicious twist to koftas and makes it a perfect and fulfilling dish for Iftar and Suhoor.

Kofta Ingredients

150 g mashed paneer
1 cup boiled and mashed potato
2 1/2 tbsp cornflour
1 tsp ginger paste
2 tbsp chopped coriander leaves
salt based on requirements
1/2 to 3/4 tsp garam masala
1 tbsp cashews chopped
1 tbsp raisins
oil for deep frying koftas

Curry Ingredients

1 tbsp oil
1 cup of diced onions
1 1/2 cups of diced tomatoes
15 cashew nuts
2-3 green cardamoms
1/2 inch cinnamon stick
3 cloves

Other Ingredients

2 tbsp oil
1 bay leaf
1/2 inch cinnamon stick
2 cardamoms
1 1/2 tsp ginger and garlic paste
1 tsp red chilli powder
3/4 to 1 1/4 tsp garam masala
1 tsp coriander powder
1 tsp salt
1/2 to 3/4 tsp sugar
1/2 cup water
1 tsp kasoori methi
3-4 tbsp cream

  1. Make Tomato Puree

    Heat 1 tbsp oil in a pan and when it sizzles, add cardamom, cloves, and cinnamon. Add onions to the pan and saute them until they turn golden. Add tomatoes and cashews to the sauteed onions and cook for 2-3 minutes. Pour in half a cup of water and cook until all the ingredients are soft. Remove from pan and let it cool. Pour the mixture into the blender and blend until it becomes a smooth puree. Strain the puree into a bowl.
  2. Make Curry

    Heat oil or butter in a pan. Add bay leaf, cinnamon, and cardamon to the pan and saute for a minute. Add ginger and garlic paste to the pan and saute on low heat till the raw smell goes away. Add chilli powder, coriander powder, garam masala, sugar, and salt and stir well. Pour the puree into the pan and stir it in properly. Cook for 3-4 minutes and then pour 1/2 or 3/4 cup of water to make a curry. Cook until the gravy thickens and traces of oil are seen on its surface. Add kasoori methi and lower the heat, then add cream to the gravy. Stir it in properly and then remove the pan from the heat.
  3. Make Kofta

    Boil potatoes until they are tender. Cool them and then mash them with a fork. Add the mashed potatoes to the paneer in a bowl, then add the ginger and garlic paste, corn flour, salt, garam masala, and coriander leaves. Add cashews and raisins to the mixture as well. Mix everything in properly until a dough is formed. Make balls from the dough. Heat oil in a pan and deep fry the potato and paneer balls in it on medium heat until crisp and golden. Remove them from the pan and cool them.
  4. Make Malai Kofta

    Pour the gravy or curry into a serving dish. Add the koftas to the dish and 1 tbsp of cream over the curry. Garnish the malai kofta with coriander leaves.
