Stuffed vine leaves are traditionally stuffed with rice and minced meat or rice and fresh herbs, and wrapped into little rolls. It is a delicious Mediterranean dish often served as part of a meze platter.

Stuffed vine leaves

40 large vine leaves
250g short-grain rice
250g minced beef
2 medium finely chopped onions
500g chopped tomatoes
2 tsp tomato purée
3 tbsp finely chopped mint
2 tbsp lemon juice
140ml beef stock

  1. Prepare the vine leaves

    Wash the vine leaves, remove the stems, and blanch them in boiling water for 10 minutes, then let them drain and cool down completely.
  2. Prepare the filling

    Put the olive oil in a saucepan over medium heat, add the onions and stir until it's translucent, then add the beef and cook for 5 more minutes, add tomatoes, purée, rice, mint, and lemon juice. Simmer for about 7 minutes, until almost all of the water is absorbed.
  3. Stuff and roll vine leaves

    Open up the leaf flat on a cutting board with the shiny side down and add a teaspoon of stuffing at the bottom end, fold it over the filling, bring both sides in toward the middle and tightly roll the leaves up.
  4. Finish the dish and cook

    Place the rolled vine leaves into a cooking pot, with sliced tomatoes placed at the bottom. Pour over the stock, cover the pan, and leave it until the rice is fully cooked.
